Sandwich on a Stick




RECIPE INGREDIENTS:

bread
cheese
lunch meat
grape tomatoes
lettuce
pickles
olive
1. Cut up cubes of bread, cheese, and lunch meat.

2. Slide the cubes onto a skewer or pretzel rod with other foods your child likes, such as a grape tomato, a piece of lettuce, a pickle, or an olive.

3. Set out a side of mayo or mustard for dippin.


Frozen Banana Pops






 Cut bananas in half
lenghtwise and width-wise
to make 4 quarters.  Stick
a popsicle stick in the
 widest end of each banana.  Roll in honey, syrup or fruit
juice then dip in a mixture
of dry ingredients such as oartmeal, ground nuts, unsweetened coconut or
chocolate chips.  Freeze.

Carmelized Onion & Pancetta Pizza

Ingredients:
Pizza Dough 
1 1/2 ounces pancetta (Italian-style bacon) or Canadian bacon, chopped
8 cups sliced onion (about 3 large)
1 tablespoon chopped fresh thyme
1/2 teaspoon salt
1/2 teaspoon white pepper
1 tablespoon olive oil,
3/4 cup (3 ounces) shredded fontina cheese,
Thyme sprigs (optional)
Cracked black pepper (optional)

Preparation:
Prepare the Pizza Dough according to directions.
While dough is rising, heat 1 teaspoon olive oil in a large nonstick skillet over medium-high heat; add pancetta, and sauté for 2 minutes. Add onions, thyme, salt, and white pepper. Cook 25 minutes or until onions are browned, stirring frequently.
Preheat oven to 475°.
Brush prepared pizza crust with 1 1/2 teaspoons oil; top with onion mixture. Sprinkle cheese over pizza. Bake at 475° for 9 minutes or until crust is crisp. Cut pizza into 8 wedges. Garnish with thyme sprigs and sprinkle with black pepper, if desired.

Pork Chops With Apples & Stuffing



Ingredients:

1 pkg. (6oz) Stove Top Stuffing Mix for Chicken
1 can (21oz) apple pie filling
6 boneless pork loin chops (1 1/2lb), 3/4 inch thick

Directions:

1. Heat oven to 375F.  Prepare stuffing as directed on 
package.

2. Spread pie filling onto bottom of 13x9-inch baking
dish sprayed with cooking spray; top with chops and 
stuffing.  Cover with foil.

3. Bake 30 min; uncover.  Bake an additional 10 min. 
or until chops reach 160F.  

Pineapple Chicken with Acorn Squash



Ingredients:

6-8 Chicken Thighs
1/2 tsp. salt
1/8 tsp. pepper
2 acorn squash, halved, seeded and cut into 1/2" slices
1/3 cup brown sugar
1/2 stick butter, cut into pieces
1 20oz. can sliced pineapple

Directions:

Place chicken at the bottom of the slow cooker and season with salt and pepper
Cut your acorn squash in half and scoop the seeds and guts out.
Next, turn them over, cut off the ends and discard them.  Then, slice the rest into 1/2" slices
Place all of the acorn squash on top of the chicken, sprinkle it with the brown sugar and place the pieces of butter all around.
Place your pineapple slices on top and pour the juice over all ingredients
Cook on LOW for 8-10 hours or on HIGH for 4-6 hours.
