Beef Stroganoff
Ingredients
1 lb. steak ($2.99)
1 Tbsp oil ($.05)
Salt and pepper
3 Tbsp butter or margarine ($.30)
3 Tbsp flour ($.05)
3 cups milk ($.30)
1 Tbsp Worcestershire sauce ($.10)
1/2 onion, finely chopped
1 4 oz. can sliced mushrooms ($.79)
Salt and pepper to taste
1/2 bag of no-yolk noodles ($.78)
2 large heads of broccoli ($.79)
Directions
1. Cut steak into cubes. Add steak to a large skillet with the oil and some salt and pepper. Brown
2. Remove browned steak from the skillet and set aside.
3. In the same skillet used to brown the beef, add the butter/margarine and let melt
4. Add flour and stir it into the melted butter.
5. Whisk in the milk and turn heat to medium.
6. Add the Worcestershire sauce and let cook over medium heat for 6-8 minutes…
7. …or until starts to bubble and thicken
8. Once bubbling, stir in the chopped onion and sliced mushrooms
9. Stir the beef back into the sauce.
10. Let simmer over medium heat for 15-20 minutes, or until sauce reaches desired consistency.
11. Prepare noodles as directed on package.
12. Steam broccoli in stove-top steamer
13. Serve Beef Stroganoff over No-Yolk Noodles with Broccoli.

Baked Chicken Marsala
Ingredients
1.4 lb package boneless skinless chicken breast ($2.99)
1/2 cup flour ($.10)
1 tsp Italian seasonings ($.05)
1/2 tsp salt and pepper each
1 Tbsp olive oil ($.10)
1/3 cup marsala cooking wine ($.50)
1 4 oz. can of sliced mushrooms, drained ($.79)
1 cup white rice ($.20)
2 large heads broccoli ($.79)
Directions 8 (8-inch) flour tortillas Directions:
1.In a small bowl, mix together flour, Italian seasonings, salt and pepper. Coat each chicken breast in the flour mixture and place into baking dish.
2. Drizzle olive oil and marsala cooking wine over the coated chicken breasts.
3. Top chicken with sliced mushrooms. Bake at 350 for 50-60 minutes, or until chicken has cooked all the way through. Cooking times may vary depending on thickness of the chicken breast.
4. Cook the rice according to package directions.
5. Steam broccoli in stovetop steamer.
6. Serve Baked Chicken Marsala with Rice and Steamed Broccoli.

Chicken Quesadillas
Ingredients:
8 ozs shredded Cheddar cheese (about 2 cups)
1 jar (16 oz) Chunky Salsa
1 cup diced cooked chicken
4 medium green onions, chopped (about 1/2 cup)Vegetable oil
1 container (8 ozs) sour cream
1. Top 4 tortillas with 1/2 cup cheese, 1/4 cup salsa, 1/4 cup chicken and 2 tablespoons green onions.
2. Brush the edges of the tortillas with water.
3. Top with the remaining tortillas and press the edges to seal.
4. Lightly oil the grill rack and heat the grill to medium.
5. Brush the tops of the quesadillas with oil.
6. Place the quesadillas oil-side down on the grill rack.
7. Brush the other side of the quesadillas with oil.
8. Grill the quesadillas for 5 minutes or until the cheese is melted, turning the quesadillas over once during grilling.
9. Remove the quesadillas from the grill and let them stand for 2 minutes.
10. Cut each quesadilla into 4 wedges & serve with the remaining salsa and sour cream.
